Welcome back to Reboot Boot Camp!
How did your ‘forest bathing’ walk go yesterday? Did you notice how your mind and body felt afterward? Try to keep the practice up each day of spending some mindful time outdoors.
All this week, we’ve been working on increasing our vegetable intake! Two questions that I hear a lot are - 1) “ How can I cook these veggies so they’re more interesting?” and 2) “What’s the fastest way I can cook these and get dinner on the table?”
Today’s challenge is to try one of the simplest methods for preparing veggies - grilling them. It’s takes so little time and tastes delicious! And, if you’re thinking, “But, I don’t have a grill”, never fear. A grill pan is one of the best investments you can make for quick dinners. I love mine! You can quickly grill asparagus and even fry an egg all in the same pan. You’ll have dinner on the table so quickly that you barely have time to set the table.
Looking for something to do with the spring onions that you bought at the farmers market? Toss them on the grill with some olive oil. Want something new to do with an avocado? Toss it on the grill and top with chili pepper and lime. You can even do corn on the cob at your backyard (or indoor) bbq. Basically, whatever veggie you have, you can probably grill it. Throw some olive oil, salt, and pepper on them and you have perfection.
