Hot Day Treats filled with Fruit
Plant Based doesn’t mean tasteless!
Any Bean Burger - A quarantine discovery! This is a total pantry pull and delicious! I don’t use garlic salt or onion salt because I just never have them. Instead, I toss in a fresh clove of garlic in the food processor and it works great.
Giada’s Simple Eggplant Parm - A healthier take on eggplant parm! Don’t worry, if you’re dairy free, just leave the cheese off and it’s STILL amazing!
Cauliflower Pizza Crust: You can also find these premade in a lot of grocery stores now.
Minestrone Soup: Delicious and packs a veggie punch!
Spaghetti Nests: Have little kids? Or big kids for that matter? These are a great way to get some greens in them in unexpected ways.
Butternut Squash Soup - You can easily adapt this to vegetarian or vegan as well.
Couscous Stuffed Peppers with Basil Sauce - I use quinoa instead of couscous
Buckwheat Noodle Salad - One of my favs! I add some shelled edamame to boost the protein.
Green Quinoa - the recipe is for couscous but swap in quinoa to up your plant based protein.
Fruits and Veggies with a Twist
Bibb and Arugula Salad with Raspberry Vinaigrette: If you make nothing else, make the dressing!
Sweet Potato Pizza Crust : Mix it up spaghetti sauce, pesto or a light amount of bbq sauce. Buy a rotisserie chicken to shred on top, pop on some veggies, cheese or no cheese or you've got a meal.
Orange and Avocado Salad with Sweet Chili Vinaigrette: Want something a little different? Healthy fats, B vitamins and citrus combine to make this a well-being boost!

Tomato and Watermelon Skewers - Cheat Tip: I bought reduced balsamic :)
Grilled Eggplant with Basil and Goat Cheese (though I skip the cheese :))
Catalan Spinach with Pine Nuts and Raisins - I make this ALL the time! If you don’t have pine nuts, simply skip them. It’s still amazing!
Kale Caesar Salad - Try it with Baby Kale instead of Romaine! Baby Kale is less bitter than other types of kale too.
Fried Chickpea Salad - They’re not really fried, more like sauteed.
Peach, Corn and Burrata Bruschetta - Get ready for outdoor fun with this crowd pleaser! You can leave out the cheese or tone down the spice. It’s delicious every way.
Easy Gazpacho - A great way to cool it down on a hot summer night!

Instant Pot Black Bean Soup (you can serve it cool in the summer)
Ginger Sea Bass over Wilted Greens - I usually use salmon and double the amount of spinach.
Dairy free Chicken Casserole Dip (get ready for your superbowl party)
Crunchy Parm Chicken Tenders - Whether you have big or little kids at your table, this is a hit.
Gluten Free Sole with Lemon Caper Sauce - If you’re not sensitive to gluten, you can always substitute all purpose flour for rice flour.
